Thank You Rica!

Saturday is my day off, I mean from cooking and all. I normally get to sleep until 11 in the morning and not worry about having nothing to eat. Afternoons are spent either going to the malls or watching a movie. Well I did not do that today, but instead allowed my 3 helpers to watch a movie. They were in a hurry to leave that they forgot about putting out meat from the freezer for dinner. It was already late that I realized we had nothing for dinner.

Good thing I remembered the pasta my girlfriend Rica told me about yesterday. So I went downstairs and started making it. Good thing I had all the ingredients, oh except for the olive oil which was not enough, so I just added unsalted butter. I didn’t have fresh basil so I used the dried ones. And I made a little variation ^_^

Pasta with Shitake Mushroom:

angel hair pasta
olive oil
shitake mushroom (finely sliced)
lots and lots of fine minced garlic
fresh basil (can use dried)
anchovies (optional, for added flavor)
salt and pepper to taste
chili peppers (for Josh and Me)

So there! That’s what we had for dinner! I didn’t expect the kids to like it, but they did. My son even said “Mom, you make very good pasta!”

The Steak that they All Love

steak3.JPGIf you ask the members of my family what they want for lunch or dinner, they would all recite in unison “STEAK”. Whenever we eat out, the first thing they look for in the menu is steak. Yes, they don’t get tired of eating steak. So I thought, why not learn how to do steak right at my own home. So I did. I usually buy it (tenderloin, sometimes ribeye) from Monterey. But today we are lucky, my SIL arrived from the States and she brought us some. Yippee! And here’s how to do it.

Ingredients:

Ribeye (or any steak cut will do)
Garlic Salt with parsley
Pepper

Mushroom Sauce:

garlic
onion
1 can campbells cream of mushroom soup
1 small can evaporated milk (i used alpine)
1 can button mushrooms
3-5 tablespoons red wine
worcestorshire
1/2 beef bouillion
knorr seasoning
2 teaspoons cornstarch

Rub each side of the meat with garlic salt and pepper. Set aside for approximately an hour. Pan fry until brown or depending on how you like the doneness.

Mince garlic and onion.
Saute garlic in unsalted butter until brown, set aside. This will be used as topping.
Saute onions until translucent, then add the sliced button mushroom. Cook for 5 minutes.
Dilute the can of cream of mushroom soup with 1 small can of milk. Continue stirring until it becomes thick. Add red wine, worcestorshire, beef bouillion and knorr seasoning. Continue stirring. When the flavor has blended, add the cornstarch diluted in a small amount of water. Pour over steak and top with garlic.

Beef Asparagus

I’ve been meaning to cook Asparagus wrapped in Beef for a long time now. This is one of our favorites everytime me and Cuz Marie eat at Teriyaki Boy. Yes i’m a copycat when it comes to food, coz my kids are sick and tired don’t like to eat the usual food that my “angels” prepare. So what I normally do when I eat out, I scrutinize the food, check and taste the ingredients used. Or I try to remember what the food is called, then surf the net on how to do it. Again this is my first attempt to do it. Once again, they say it’s yummy ^_^

Ingredients:

asparagus soy sauce
beef sirloin (sukiyaki cut) garlic
balsamic vinegar sugar
salt and pepper unsalted butter

Procedure:

Marinate beef and place in the ref for an hour.
Wrap the asparagus with paper thin (sukiyaki cut) beef.
Place in a bowl and steam for about 6 minutes.
Melt unsalted butter in pan, saute garlic.
Put some of the marinade, then pan fry the beef with asparagus.

Note: I don’t normally measure my ingredients…trust your tongue ^_^

Gourmet Meal

It was only last Saturday that we finally got to use the table top griller we bought at Living Well. I prepared korean beef and chicken barbeque and some squid balls. It was like eating at TongYang but having to spend only a few bucks. Everyone enjoyed the meal especially my lil boy who can never thank me enough for the “gourmet dinner” that I have prepared for them. Yep, he used the term gourmet…hhhmmmm that’s why I love preparing meals for my family, they usually appreciate everything I prepare for them, except sometimes for hubby who always have something to say, and I’d go like, yeah send me to culinary arts school (*roll eyes*) and go hhhmmmmpppp!

Yay! I’m a happy Momma, I’ve successfully terrorized my kids to eating one banana a day…I even had to send an email about the benefits of having a banana a day to my dear daughter, just to be able to convince her…didn’t have problems with my lil boy though, he can eat anything, and i say anything.

I was really wondering how come my lil boy hasn’t been bringing home a perfect score of 100 in his seatworks and quizzes. So I offered to pay him ten pesos for every 100 he brings home, and now im BROKE…
